most grocery stores sell already minced garlic in a jar for very inexpensive. it is not quite as good as fresh chopped BUT it works well in a recipe like this and it gives good flavour. garlic powder may work well but i don't know what the proportion would be.
saltine crackers may work well and they have a very good flavour on their own - i suggest you don't use croutons unless you REALLY like the flavour of them and you smoosh them up first.
tomato paste is much thicker and gives off a very intense flavour. so if you use ketchup in stead use a good amount and remember that your meat mixture will be wetter and gooshier. is that even a word? so anyway, you will need to cook it at 325 - not 350 for a little bit longer - just a few minutes. just cook till done.
