Mechanicville, NY | ok John. here is my meatloaf recipie for you. This thing is - I never measure anything. I just do what looks good at the time. Bear with me!
Judythe's Meatloaf
1.5 to 2 pounds hamburger - 80/20
2 large eggs - maybe 3 if you like
1 can tomato paste - 4 oz. I think
3/4 to 1 c. Italian bread crumbs from a can
Sauteed onions and garlic chopped fine or at least real small
Worstechester sauce
Salt and pepper to taste
1. Saute onions (as much as you like I do at least a half a cup myself) with garlic (again as much as you like) in some butter till lightish brownish. I don't use raw onions because they don't cook in the meatloaf - they just steam. I like the flavour of cooked onions and garlic and it makes the meatloaf juicy.
2. When onions are done, dump on top of hamburger which you have put in a big bowl already. (nice save eh?)
3. With clean hands, incorporate onions and garlic well.
4. Add tomato paste, bread crumbs, eggs, several good shots of Worstechester sauce and salt and pepper. I use kosher salt and Nature's Seasons myself. But you do whatever blows your hair back.
5, With clean hands, incorporate everything really well. If you feel you want more tomato paste just do it.
6. Put into a foil lined pan and pat into a loafish shape.
7. Bake at 325 - 350 till just done BUT NOT DRY. When you take it out of the oven, remember, it will keep cooking for several minutes. Dry is bad.
8. The meatloaf probably has created lots of nice savoury juices now and is smelling good. You can put a coating of barbeque sauce or ketchup on it and put back in the oven for a few minutes if you like. I like to put ketchup on it as soon as it comes out of the oven and I just leave it rest for a while.
9. I make a gravy out of the juices - I scrape up all of the crumblies on the bottom of the pan with all of the fat and stuff and it makes a delicious gravy. But that is just a personal preference.
10. Don't cut into it while it is super hot or it may cumble a bit.
