Soft white Im assuming? We havent had any sprouting problems here since we switched to soft red. Years ago, too young for me to remember, dad said he had a field of soft white sprout really badly. Like yours when they harvested it the heads had green sprouts growing out of them. Interestingly enough after the wheat went through the combine, all the sprouts were knocked of and it graded #2. Not sure if the elevator just gave him a break or what, but they were able to blend it out with good wheat. May want to talk to your local elevator , see if they are willing to take it, and blend it out. You may get docked for feed wheat , but its better then nothing, especially if you insurance will cover the quality issues.
