If you have a big turkey and put it in a 5 gallon bucket that won't fit in our refrigerator, do you put them in a fridge?  



Local news had segment on dethawing turkey quicker by placing turkey in water bath. Making sure water stays below 40 degrees they added cold water and ice cubes with recommendation to add ice cubes regularly to offset room temperature. They also added lemons to the water. Don't see why a monitored ice bath couldn't work with a salt brine for turkey outside refrigerator.
