I never took insulin but #'s kept creeping up. Doctors were after me since I was 19. High cholesterol too. Very strict diet. Even to washing cream out of 0% fat cottage cheese???. Fake plastic cheese. We eat fresh fruit, our own grass grown meats, pastured goats milk butter. I eat oatmeal, nut butter (allergic to peanut butter) Lots of berries. Dessert is limited to fruit crisp, no added sugar, just oat meal and cinnamon topped with butter, canned fruit in own juice with nut butter on a fork in winter. We do eat a lot of walnuts, filberts, hickory nuts, some dried fruit and raisins. Home made muffin with nuts and ground oat meal, egg and butter. Ground lean meats, our free range chicken breast, wild turkey breast, lots of fish. Fish tacos with our own homemade sweet corn meal tacos. Chili and stir fry. I use goats milk for dairy, lactose intolerant since birth. Cheese, cottage cheese, butter. Venison, elk and goat meat. Lots of vegetables, yellow wax beans or cabbage with a little real bacon bits for flavor, haven't had bacon for years, zucchini for filler in casseroles, spaghetti. We crock a lot of vegetables with vinegar, kraut is made with 1/2 the salt and frozen or canned for long term. We do make our own gluten free egg noodles with our free range eggs. We don't buy any processed foods. No granulated sugar or flour. No added salt, I use no salt seasoning from Dollar Tree. We seldom eat out, no pop, plain burger, sausage biscuit once in a while although not in last 3 years. Halibut dinner, fries and coleslaw, halibut fish sandwich, fish tacos on corn tortilla. We do not make sliced bread at all anymore. Once in a while make hamburger buns with ground oatmeal and english muffins although seldom anymore.

A couple years ago I had real bad pain around my shoulder so bad I was beginning to think it might be heart related. Went to ER, sure, they said they could see something on the EKG, old heart attack? sent me to a heart specialist, found nothing except my insurance. Wanted yearly checkup, Why!!. My dietician said it was inflammation in my shoulder joint. Recommended only grass fed butter, cold first press virgin olive oil for higher heat cooking. No deep fat frying, very little pan frying, except stir fry and seldom fry the meat. We only have a trash burner to cook on, offgrid, no propane. Otherwise dutch oven or camp fire. Use previously dutch oven or boiled meats. I only drink water, I freeze 2 bottles and rotate them. Only hot drink is lemon and honey, in the winter. Wild honey with comb has helped with my allergies over the years. No meds anymore other than an occasional allergy eye drop for dry itchy eyes. I have tried to eat less meat but I have a hard time getting enough protein, can't eat a lot of beans. I will not eat any soy at all. I do make a bean salad with green beans, kidney beans and garbanzo beans with raspberry vinaigrette. Buy some canned chili beans for chili, ground elk, tomatoes, bell peppers and chili powder. Very little rice, some wild rice that we grow on our pond. Bad teeth and weak bones from polio. No molars left, no fillings or crowns left, 1 build up front tooth, chipped from being hit as a kid, built up a couple time since. 8 top, 10 bottom. I did lose 3 from being kicked by horse, broken jaw, upper left.

Never had to worry about weight, 5'3" 128 lbs. Was a sickly kid. Heart never mentioned. Older brother was 14 mos older, nursed for a year. Mom never came into her milk for me. Formula, didn't do well the first 2 weeks. Old neighbor lady said try goats milk. I am lactose intolerant. Perked up, had the bowel/colon surgery I needed and started to thrive. Strangled, made a pouch for stomach, took most of intestine and 1/2 the colon. Never got a taste for goats milk, don't really drink it. Use a little in oatmeal and a little for cooking, do eat my share of cottage cheese and farmers cheese, some nearly every day. Dr. recommended cod liver and castor oil everyday until I was 12. Fish oil capsules since. Polio at 7. Bad polio relapse at 37. Shingles 3 times, 2 shots after first time. Took 1 J&J shot, haven't had covid that I know of....James
