That is about as rare as I like it. Would prefer it just a little more done.
Just perfect for my wife.
I don't care for blood on my plate so if they are going to serve it to me that way the meat needs to be rested before being plated. At least for me to find it pleasingly appetizing.

Wife and I both had strip steaks tonight at a nice restaurant. Ordered mine medium and hers med rare and both of us were happy with the outcome. Some places she has to order rare or they get it over done for her.

I'll eat it about any way as long as it is at least seared on the outside to kill any stray pathogens.
