Virginia | As I had previously posted my peppers i the garden have been really doing well. This also includes my hot peppers. The last several years I have been planting Hungarian hot wax peppers. I prefer their taste to jalapeƱos. Ive never made pepper poppers until now but they are real good and low carb. Here are a couple pics and the recipe.
2 packs cream cheese ( 1 pound )
1 pack bacon
3 green onions
Olive oil
Shredded cheddar cheese
12 -13 large/long peppers
Season to your taste ( I used salt, pepper , season salt, garlic powder and paprika
Cook bacon and chop
Chop up green onion
Add to bowl with cream cheese and seasoning
Add cheddar cheese ( a good sprinkle or several hand fulls )
Mix together well
Cut peppers down the middle and take out innards ( if you want more heat leave some seeds )
Drizzle some olive oil on a baking pan
Use a spoon or fork and fill peppers ( I found a fork does better)
Put in pan and add some more chedder on top ( I ran out and had to slice some off a block)
Quick drizzle of olive oil over top of peppers
A little more seasoning to taste
Bake for 20-30 minutes at 400 degrees
