A lot of the people in this area use the Zatarain's or Tony Chachere'e jambalaya mixes. These mixes can be purchased form Amazon.COM. You can make a jambalaya any way you want to. That means you can use chicken, turkey, duck, goose or alligator with sausage or any type of wild game, beef, pork or whatever you want to use. Shrimp and crayfish are also good in a jambalaya.

Traditionally, a jambalaya or gumbo was a quick, easy, cheap way to feed several people with whatever type of food you had available.

Regardless of what you do I hope you enjoy your jambalaya. Like they say, you should eat rice because potatoes make your butt big.
