Subject: Brisket on weber grill

I cooked a brisket on 22" weber kettle last week. I can say it was a better brisket than I have ever had at any BBQ place or restaurant ever. Used the "snake method" to grill. Run charcoals 3\4 of the way around outside of grill 2 wide and 1 more on top.
added a few chunks of cherry and lit one end. Had a tin with some water in it in the middle and added brisket. Let cook at 250-275 till reached 150 then wrapped and continued till 205. For seasoning used yellow mustard and a brisket seasoning I picked up in Laredo, Tx. It is called "Dos Pendejos Mooey Texas". When it was to 205 took off grill and let it rest for about an hour.


Once the charcoal is lit and burning control the heat with the bottom vent. I left the top vent open full and closed the bottom down to almost off. My in lid thermometer is pretty accurate and I kept it between 250 and 300 also keep the vent opposite from the coals that are burning to pull the smoke over the meat.
