Freeze them, my wife chops up peppers and puts them in ice cube trays to freeze , use them in the winter when you need some in a recipe. Also freezes the bell's , stuff them in the winter .
My wife stuffs them, then freezes them (vac packing). Sure, are good in wintertime.
