Sounds like a good meatloaf.

For people doing low carb, crushed pork rinds can be substituted for crackers or bread to add as filler so the loaf doesn't get so dense.


I was going to use pork rinds but I didn't have any. My son ate the last of them. If your going to substitute breadcrumbs or crackers with pork rinds you should try it in salmon cakes. I always thought my grandmother made the best salmon cakes but mine with pork rinds would give her a run for the money....
