Pepper steak. 1 lb, cut across grain into thin strips, marinade in 1/4 cup soy sauce, 1 clove garlic or 1/8 tsp garlic powder, 1/2 tsp ginger, longer the better. Brown beef over med high heat until browned. Add 1 cup green onion, 1 cup bell pepper, 2 stalks celery, cook about 5 mins until tender crisp. Mix 1 TBS cornstarch into 1 cup water, add to pan, stir and cook until thickened. Add 2 tomatoes cut into small wedges, heat through. Serve over rice and or top with crisp chow mein noodles. I get everything together and slice and chop the night before. Very quick meal. I usually double the vegetables and half again the cornstarch and water. Meat more for flavor. We use elk meat or venison....James
