When making vegetable beef soup/stew, I marinate the meat, onion, and spices in apple cider for a couple of nights before cooking day. Then put everything in the crock pot, add the vegetables and some beef stock in the morning. Set it on slow cook and walk away. It is ready to eat late in the afternoon.
