live in Spfd, farm located NW Macoupin county | I do a similar version. Start with bacon but into 1.5" lengths in the skillet. Throw a washed potato in the microwave, cook until it is still a little stiff and then cut into 1/2" chunks. Add potatoes to skillet. When potatoes have finished cooking and have a golden brown edges, add scrambled eggs. When eggs are done, add shredded cheese flavor of choice. May add salsa if the mood hits me. |
