SWOH
Was he a family member of the family farm sellout or just an employee? And just out of curiosity, how old is the guy?

I’ve seen this situation happen because the employee didn’t get clear cut instructions on how to get the job done in the first place. Or what the expectation was. Kind of a learn as you go deal and we won’t tell you when you’re doing it right, just bring up what you’re doing wrong. That’s a motivational killer to some. Find out what makes the guy tick. I’ve also seen it where the employee is given free reign over how to get stuff done but doesn’t get along with the boss and spends a lot of time avoiding the boss, which is very inefficient.

I’d let him go. There are enough places looking for that kind of guy that would be happy to have him and maybe he’d be a better fit for them and everybody would be happy. Or cut his wages to match his output and let him decide. Finding the right people make or break a place, sounds like he isn’t right for what you need.
