The grass is a great idea, I actually had a good local agronomist recommend the same thing a few years ago. I don’t feel I can go that way at this time as the dairy hay market still prefers straight alfalfa in this area.

You are also correct about the sulfur. I’m going to try to get some gypsum on this fall. I had been using elemental sulfur annually but I only applied it to half of each field one year when money was tight. I definitely saw a yield drop on the half fields that the sulfur was applied to and haven’t used it since.
