I am the old slow guy you mention.
I got a 65 about the same time and struggled with the pattern, but now that is all good. Needed more time in the seat.
I am not aware of a sensitivity adjustment on the Kubotas. Throttle down and keep working the machine to gain familiarity with how it responds is all I can offer.
