While a cooler than normal spring can definitely delay harvest date, the later season temperatures (specifically from flowering to dry-down) will likely have the BIGGEST impact on harvest date. This same principle (duration of the grain filling period) obviously has a significant impact on grain yields too within most wheat producing areas.
