West central ND | It tastes very much like beef. Less fat so need to cook it like Buffalo. We mixed 10% beef fat in the ground moose. The texture is slightly different from beef. I got my once in a lifetime moose last year so we have been enjoying it for a year. Mine weighed 459 lbs hanging on the rail. Wife's was 396 lbs.
