I stick to a similar timeline as alfalfa for cutting grass hay. Cutting at the wrong time doesn't put as much risk of winterkill as alfalfa, but it does reduce early spring growth. I kinda figure any harvested growth taken after the middle of September is just borrowing from first cut. Cutting later gives more time to build root reserves, but catches less snow for protection. You might be enough farther south that is less of a factor.
