You pretty much need the crop sold in order to fully collect the carry. There are some otherways with buying and selling different months but I have never seen those work out near as good as actually having the crop sold and there is also a lot more risk invovled with that. I like to have pretty much everything in the bin hedged to collect the carry. If the price goes up there is always next years crop to sell and most of the  time there is risk premium or carry build into that also.
