I make it with zucchini. I peel it, slice thin lengthwise with a mandolin slicer, then sprinkle generously with salt. Let sit for 20-30 minutes ( this will remove much of the moisture), then drain and arrange lasagna per recipe. The only time anyone has noticed it wasn’t actual noodles was when I left a little peeling on it.
