i made a batch of crock pickles this year. used spices.dill. alum . grapes leaves, pickling salt.vinegar ect, put in crock with a plate on top, checked daily, no scum. smelled great after 3 weeks i tried one. rubbery and nasty tasting. what could have gone wrong
What I see wrong here is the vinegar, that would have ruined the ferment. I make a couple crocks of pickles every summer, just like my grandmother used to do. We call them swamp pickles because of the nasty looking brine when they ferment. My aunts,uncles and cousins come for miles to get them when theyre ready.
