Sounds like a plan to me. Only I wouldn't call saturated animal fats bad. I would call them best and ancestral. They are the best of fats that avoid oxidation. Oxidized fats are the bad fats.

I'm type 2 and try to stay under 20 grams, but I've been diabetic for around 30 years and used to take 100 units of insulin a day plus several pills. So my diet has to be more strict than most would need be. I am drug free now (2.5 years) although I have been experimenting with metformim the last couple weeks to see what it does to my fasting blood sugar.
