coast of Maine | So I always enjoyed potatoes as fries and only consume once in a while now.I was thinking why not thin slice like french fry cut a young eggplant and pan fry.Got them a little too hot but I definitely will do again.Enjoyed them with local mussels and some Georgia shrimp I dragged north this winter.
