I take issue with the anti-beef argument that cattle are responsible for global warming due to methane production. For one thing, termites produce 3 times as much methane as cattle, and both of them rely on microbes in their gut to break down cellulose, producing methane.

If you eliminated all the cows on earth, it wouldn't change a thing, because the microbes would still do the work regardless.
