NE IA | Always, and I dont care how old the cow is pull the tenderloin out even if the rest of the cow is being made into burger. The reason the tenderloin is as tender as it is has nothing to do with the age of the animal being harvest and everything to do with the way we hang and age our beef in this country.
We had a cow that we didnt actually know the age of, had her for 14 years and was a cow when we bought her. Had her turned to burger but kept the tenderloins and you would have never known that it didnt come from 18 month old steer. | |
