DO NOT BOIL SWEET CORN!!! Long ago, sweet corn had to be boiled to make it palatable because it had a tough skin on the kernel. Not so with the newer varieties. Just put 1/2 inch of water in the bottom of a large pot with a steamer basket in the bottom so the corn doesn’t touch the water. Bring water to a boil first, then add corn and cover pot. Steam corn for 8-12 minutes. It will be crisp and sweet. To freeze, after steaming, put ears directly into ice water till chilled, then cut off and bag with a pat of butter. Delicious in the dead of winter!!!!
