Why? What does it do? Change the flavor?

I inject my briskets with beef broth. Season with a mixture of garlic salt, black pepper, cayenne pepper, paprika powder and a little bit of curry. Smoke with pecan wood at 225-250 or so until internal temp hits 165 or so. I then wrap them in foil and I pull them at 203 internal temp.
