Lambs grade out around 51-53%. 135 pound fat lamb pretty standard, some breeds less and some more, but 60-70 pounds of meat when all said and done. So consider this when the ethnic lamb market 3 months ago were killing 60-80 pound lambs instead of finishing them out and receiving half the standard amount of meat, you now know why lamb is at record prices with shortages of meat.

Note:
Yield will differ greatly on pelt condition; shorn lamb, carrying some tag, ect....
