My wife has been doing this the last couple years. Buys eggroll wrappers, day after Thanksgiving makes eggrolls with turkey, potatoes, stuffing, cranberry sauce. Dip in gravy. Doesn’t look like much, but now I almost look forward to this more than the big meal
