You can use a mower/conditioner to cut stalks. I've done it, wouldn't want to do a whole ton of acres, but its doable. Lots of guys use the batwing bush hog they already own as well.

More recently I've started just going out with the side delivery rake, raking what comes up and baling it. Leaves more of the stalk standing to help with erosion, still makes for plenty of fodder to bale. We do not have a chopping head.
