Little River, TX | For what you are saying I would recomend a grass hay that is between 10 & 12% protein.
With alfalfa horse hay at 100% bloom is still rich for the casual horse. Half bloom if it is a wet mare or in DAILY training for the track or rodeo. Even then give them free access to a fair quality grass hay.
There is an awful lot of energy in alfalfa and if they do not burn it off they will become butter ball fat.
There will be regrowth buds on the crowns. Just cut above those buds.
For a dairy that is planning for high quality forage, then you cut in bud stage.
I sell both alfalfa and grass hay to horse owners. I try to get them to first not buy any alfalfa, next buy only enough for special treats, and last option, buy some grass hay from down the road to feed free choice, with the alfalfa becouse good grass hay is all their animals require.
