I think you want to do a little bit to much in 7 days, try to avoid driving between 7 and 9 AM and 4 and 6 PM unless you like being stuck in traffic. https://www.anwb.nl/verkeer/filelijst
Van der Valk hotels/motels are most times good places to eat in the Netherlands. But you have to go to a snackbar for a frikandelletje speciaal and a broodje kroket.
Zaanse Schans, old windmills and cheese maker Henry Willig are close to Amsterdam and maybe nice to visit.
