If there is a person that is in an ideal situation to go organic, its you.

Most people don't want the rotation, you already have that.
Most don't have an outlet  for the grain and hay/alternative crops, you have that.

RTK makes cultivating easy.  If you have a guidance 3pt hitch just set it down and search agtalk until you have to turn around.  ( Its not quite that easy, but not far once it's set up.)  Matching equipment on 30' would make it really easy.  Get a good rotary hoe, you will want one if you don't have one already.

Organic Potassium sulfate  can be bought.  Just had an email this morning it was $900 a ton.

I don't farm organic, but I would in a heartbeat if I was in your situation.
