I have been getting my k needs filled through layer litter. If you need more you can use potassium sulfate non-synthetic.

You can use the omri website to search for approved inputs. Omri.org

With the hay in your rotation you're already ahead of the game. I'd take on the 80 and start transitioning all your acres a little at a time. 2/3 in hay 1/3 row crops/small grains. Might even let some of the worst ground go, 500 acres organic makes more money than 1000 conventional.
