Minot, ND | If they fall off the bone they are over cooked an ideal rib will take a small amount of effort to remove from the bone but should come away clean. Lift up on 1 side and if u start to seeing rips that are greater then an 1/8" i will pull them off and let them set for a few minutes before cutting. Never foiled ribs and idk why you would. Its not like a brisket where u can run out of moisture unless of course for going for fall off the bone ribs. | |
