| The buffalo I've had was usually quite good, as ours was last evening. There is a buffalo processing plant in Brush CO. Evidently they are as short of supply as cattle, only processing four days a week.
I was impressed by the crowd. We left about 7:30 and there were still people coming in. You don't come to that sort of place to eat chicken, though there were several fowl options (literally when it comes to chicken). Zero pork if I remember right. Appeared to be plenty of steak of both kinds being served. A number of families. Diverse ethnic representation. At 7:30 in our local towns on Sunday evening some restaurants are starting to close, let alone have many customers. It wasn't cheap as you can imagine. In this instance anyway, the demise of beef consumption because of price appears greatly overstated. | |
