I have never tried creating a headland line in Famworks and sending it to a display, but...
I have found out that the type of line is controlled by an attribute in the shape file called "Id". Iit is a number: 0 is a straight line, 1 is a curve, 2 is a pivot line, 9 is a freeform line and 7 is a headland line. Unfortunately I do not think you can edit it within Farmworks, but software like QGis will let you.
So theoretically you can create the lines you want as curve lines, and then once you are finished, open the shapefile with QGis and change the type.
If you like, create a line you want to be a headland, export the field as if you were creating the file for your display, then send it to me and I'll change the attribute to a headland, then you can see if it works on the display.

Another option might be that you copy an existing headland line, and paste it in the field where you want to create a headland. Obviously it will be in the wrong place, but you can move it to the correct place and then edit the nodes to suit. if you choose the rectangle select tool, and then click and hold on the line, the cursor should change to the hand and you can drag the full line to a different place, like to the field you want it in.
