I can walk into a restaurant today and have more confidence in getting good bacon, ham, or pork chop than you can a steak or roast beef. Even the hamburger needs special sauce to swallow it.
I know what a great steak is and tastes like. Hamburger can be very good- if you are grinding choice plus and prime— All Natural fed cattle.
I don’t know what “dive bar restaurants” you frequent but that isn’t the case.
The “good pork” comes from some sort of heritage pork or Niman Ranch branding….
