This is the Achilles heel of pork… soooooooo many people over cook it! Just grilled a couple hundred pork burgers yesterday for my son’s graduation party. Lots of comments about how good they were. And that’s after grilling and sitting in a roaster pan to keep warm. I had to taste test my seasoning on the first couple and hot the grill they were wonderful.



Honestly it drives nuts listening to people bitch about dry tough pork.    The same people cook or order their beef “medium” but cook their pork way past well done until it looks and tastes like shoe leather.   If they prepared their beef the same as they do pork it would be a tasteless dry piece of shoe leather as well.  

99.9% of the time its not the pork that is the problem.   It’s the person over cooking it that is the problem.
