8" should be fine for 1-2 story house. If you want TRUE brick exterior, then go with 10 or 12" foundation. (called a brick ledge). Good footings are a must, look into "form a drain" for footing forms. Built my own foundation with plywood forms from cement co. saved lots of $$ but what a PITA! Lots of work, but lots of $ saved.
