I have linked to Dr Bikman many times. I have stated he is one of my heros concerning diabetes and how to reverse it. His main focus on research is on insulin and the body's metabolism. If you want to understand how your body works and utilizes food he can take a very complex subject and relate it in such a way that an ordinary person like me can understand. He is cutting edge, doing a lot of the research on the subject in his own lab and what he does not do he stays up on other researchers results. It is long. But I think this interview is worth listening to if you are interested in your health as it relates to diet. As many times as I have listened to him, I keep picking up bits and pieces of new information. And his research is current and ongoing so he presents new stuff as he learns it also.
