If I had to guess I would say either A) evaporator is freezing up and causing system to shut down untill it thaws out, setting the thermostat cooler to make it "work" is just a coinsidence. or B) High side pressure is getting too high and shutting sytem down, then it re starts once high side pressure comes back down. Freezing evaporator can be due to insufficient airflow over evaproator (plugged filter or plugged evaproator or both, or blower isnt running fast enough). High pressure on high side is typically due to poor airflow accross condenser or too much freon in system. Best thing to do is to hook gauges up and see whats going on. Second best thing to do if no gauges would be to cleasn radiator/condenser real well and clean/replace cab air filter. May be necessary to clean evaporator too if those things dont fix it. It would help to know what tractor it is.
