As far as how they get that way, their personality absolutely has something to do with it. Sure, their environment and genetics play a role too, but in every group of cattle you'll have some that act different than others even if they have been raised in the exact same environment and even share a lot of genetics. Some will come up and sniff your hand and some will run to the opposite corner and watch you. I know which ones I'd rather work with - although I do get what he's saying that the combination of stubborn and gentle can be a PITA to work with.
