Data centers are being built by companies that think that they're going to either miss out on the "AI revolution" or are going to hugely profit from it.

IMO, having lived through the Dot-Com bubble in 1999-2002 from the inside of the bubble, I'm seeing many of the same behaviors from the dot-com bubble in the AI bubble. And yes, it is a bubble.
