I don’t know squat about a pig nursery but can share what worked for us.
We converted a concrete floored wash room to a cooler several years back. The room had 12’ ish rafters. We built 3, 9’ perimeter walls, laid 2x6 on 4’ centers on top of the walls for a ceiling. Laid sheets of 4” insulation on the top of the new ceiling trusses and between the wall studs. Covered the whole thing with silo paper for a vapor barrier and OSB over that. Cooling is provided by 2 (units Coolbots recommended) Home depot a/c units controlled by Coolbots (see the link). I thought the a/c thing was a joke but with a fan running in the room they could maintained 45* on the hottest day. Ammonia is an issue with these setups. We have 2 bathroom fans on timers to provide some air exchange.
