Simplest way to cook a roast is to get a pan, fill it ~0.5-1 of water, season the roast with pepper, salt, chipolte Tabasco, etc. and cover with AL foil. Cook ~1.5 hours at 350F. Take the AL foil off and turn the roast over. Re season the top. Put the AL foil back on the pan. Cook another 1-1.5 hours at 350F. Take the AL foil off, turn the heat off and put the pan back in the stove. Start cooking the other vegetables, etc. Watch the roast through the window. When it darkens to the darkness you want pull the roast out of the oven. Let sit for a few minutes. Carve up and serve. The times will change a little for the different types of roasts.
