Subject: Horseradish around East STL questions

I've been hauling corn down to East STL, and had some questions for anyone who knows anything about horseradish. I've always thought it was neat to see something other than corn and beans, but basically know nothing about it. What's the reason for waiting until winter to harvest? Does the frost do something with the sugars to make it ready? Why do you harvest a little bit at a time, then come back and do a little more? Can the place that takes it only process so much at once? I notice some guys will come back and rake the leaves into windrows after harvesting, what do you do with them? I've also heard that 90% of the worlds horseradish is grown in Collinsville, any truth to that? TIA, I'm basically just being nosey as I drive by!
