Western-Central Lower Michigan | I would go with 6" walls and cellulose insulation. I did and love it. Put 18" or more in the attic too.
Agree on a sink and toilet in the area where you will come inside from the "shop or field work". Anyone can duck in and use the toilet without tracking in the house, and its just handy to get used to washing up when you come inside the house.
